Q: Where does it come from and is it made from protected cows?

Yes this butter comes from farm, organic pastured, cows. I do a lot of research before I purchase products on line. I highly recommend this product and I have used it for years.

Q: Is the butter derived from A2 milk/A2 milk producing cows?

The milk for our ghee comes from grassfed organic US cows which could be either A1 or A2.

Q: Can someone tell me the difference in use, taste and nutrition between their cultured and non-cultured ghee?

Check out the Pure Indian Foods website for detailed info on the process--the fermentation process produces flavor compounds which gives the ghee a more buttery taste. Plus it's easier to digest. Again, check the website. No casein or lactose in cultured ghee. Delicious!!!!

Q: I have made my own grass fed ghee that has been double paper filtered, and I still reacted to it. Will I react to this one?

When I did my food allergy test I was highly reactive to eggs, mildly reactive to dairy and wheat. If I even eat an eighth of a teaspoon of mayonnaise, I really feel it. If I eat dairy or wheat, the reaction is milder and slower to come on. So, if dairy is as aggravating to you as eggs are to me, then it might produce an immune response. That said, I've used gobs of this butter and have been fine. I spoke with this ghee maker a year ago, and he says the culturing process (most ghee makers don't do this) takes the casein down even lower and it tends to not aggravate dairy sensitive folk. Now, if you're lactose intolerant, that's an enzyme issue, not an immune response. Use lactase to help that problem. If you want further help identifying food allergens, the best blood test is U.S.BioTek's "99 General". Or you can do the allergy elimination/provocation diet to isolate and rule out foods that make you sick.Probably more than you needed, but I'm a nutritionist. Can't help it.
